Four a Day and I'm Already Up to My Eyeballs

My hens began laying eggs a couple of weeks ago. For the first few days, there were only two eggs a day. Then suddenly there were three. Over the past ten days, the number has gone up to four eggs a day.

Despite the relatively low level of production to date, my refrigerator is already overflowing with eggs, and I find myself wondering what I'll do when all twelve ladies click into gear and ramp up production. When that happens, I'll have ten-to-twelve eggs a day, every day -- at least until the dead of winter when production apparently drops off rather precipitously. 

As far as I can see, I have only two options -- either I go into business, or I start gathering a volume of creative egg recipes. Since most people in my village have their own hens, I reckon egg recipes will be the way to go!

You don't have to refrigerate them so that should help

@ Whitney - That's true. In fact, most grocery stores here in Hungary do not stock eggs in refrigerated areas but keep them on shelves next to other items like pasta or canned goods.

My wife is planning on storing extras in a jar with lime. Apparently it is a preservative.

We also tend to leave them on the counter & refrigerate them.

There's also always the road-side stand for selling extras, or just giving away to neighbors.

I get the sense I'll be giving away quite a few eggs here and there.

Nothing wrong with eating a few eggs a day. I think the dietary recommendations against it were bad.

@ Andrew - I agree. I was eating several eggs a day even before I acquired the chickens, and now I will gladly eat even more.

I stopped adhering to dietary recommendations about twenty years ago. If I hadn't done so, I'm certain I would be fat and sick or dead by now.

We have chickens as well, and I tend to eat 4/day as well. There are a lot of great and important nutrients in them!

Turn bugs into eggs.

Scramble them uncooked and then portion them out in something like muffin tins and freeze them. Transfer to a freezer bag and you can use those eggs in winter when your hens aren’t laying. Measure them in equal portions so you can use them in baking recipes if you want.

To reduce production: assign each of the hens a unique number from 1 to 12. Then roll a pair of dice. Take the hen with the corresponding number to the dice, and tell it "Winner, winner, chicken dinner."

Another use for surplus eggs is to make noodles. A $50 noodle maker that has adjustable rollers for thickness and two sizes of slicing teeth for generating the width of the noodles is a good tool to own. Dry them on a bed sheet or in a food dryer and they'll keep in jars or plastic bags for many months.

Be careful with the 4 eggs a day for a prolonged period. My brother-in-law did that and ran into some heart problems.

$50 pasta maker?

My "pasta maker" is a rolling pin and a rolling-disc pizza cutter.

Any inconsistencies merely provide evidence it was made by hand at home.
